(Eating Trends)  – Tucked in the food court of the Concord Mall in Concord, NC is an outlet called ‘Pholicious’. The small restaurant serves the traditional Vietnamese Pho style food bowls along with other Vietnamese offerings. The owners are opening a second location near the campus of Eastern Carolina University. You may ask why does a small mall food outlet deserve an article on a website that deals with big names in the culinary world? What’s so important about a small business owner who is going to open another outlet at Eastern Carolina University? Or the importance of the fact that he owns a successful nail salon with plans to open a second one? The real story is not the fact that his food is palette pleasing authentic Vietnamese cuisine or that this type of cuisine promotes health and wellness. The real story is how Hien Tran became an American business owner.

In America Hien Tran goes by the name of Jason. Jason is an immigrant who came to the USA legally. He spent years as a child in Viet Nam being raised by an aunt. His father was living in Malaysia because of political realities in Southeast Asia. Jason’s father was able to apply and get immigration clearance for the United States under refugee status. Since his arrival in America Jason has spent his time getting educated, working hard and then becoming an American citizen. He is a prime example of a legal immigrant who embraces his American home and culture while still retaining his connection and appreciation of his Vietnamese heritage and culture.

When interviewing Jason I was struck by the thankfulness for what he has in his life. He has strong religious beliefs which steady his spirit and keeps him on a proper path. This respect for the life he has worked for has spawned a desire to give back to his adopted country. As a recipient of the American Dream he wishes to involve himself in endeavors that promote awareness of the opportunities available in the USA for immigrants and citizens alike. Jason also is planning to begin a non-profit organization that utilizes 50% of his restaurants’ profits for the homeless. When discussing his charity plans, he did so with a lot of feeling and intensity. He exhibited the same intensity when speaking about the American Dream.

One would think that Jason probably has enough on his plate to contend with (pun intended). In addition to all the business ventures, securing capitol for investment and plans for non-profit charities and his own family life, Jason is considering joining the ministry and becoming a pastor. It sounds as though he plans on not only serving Pho for the body but also Pho for the heart and mind. Jason wishes to share many positive messages with his fellow human beings. Feeding the mind, spirit and body with healthy things and having thankfulness for what you have in life leads to a sincere appreciation for the pursuit of the American Dream.

Next time you see a small storefront restaurant or mall outlet, realize that what seems to be another food outlet might just have a much larger story behind it.
