Antonio Colmenero de Ledesma was a physician and surgeon of Andalusian origin in the late seventeenth century. He is known for having published several books of Materia Medica (Apologia chirurgica) as well as in 1631 one of the first treaties of chocolate in Spanish (its title in Latin is ‘Chocolata Inda; opusculum of qualitate et natura Chocolatae’). The book’s publication was one of the first times that the recipe is described as a hot drink.

In his treatise he highlights the use of the drink for medicinal purposes, in that time it was a very popular drink, although subject to heated debate as evidenced by the work of Antonio de León Pinelo (rapporteur of the Council of the Indies ). Later his work was translated into several European languages, spreading chocolate recipe to different countries.
